Chicken Noodle Soup

1 chicken breast, cut up into bite size pieces
2 chicken thighs, cut up into bite size pieces
6 c. water
2 carrots, sliced 1/2 inch
2 celery stalks, chopped
1 T. salt
1 t. sugar
1/4 t. pepper
3 chicken bouillon cubes
1/2 t. parsley
2 c. egg noodles

Heat all but the noodles in large saucepan on high until noodles and chicken is cooked tender, about 25-30 min. Add2 cups of water bring to boil, add noodles, boil for about 10 min. Enjoy!

Taco Soup

1lb. ground hamburger
1 med. onion, chopped
1-28 oz. can tomatoes, crushed
2- 8 oz. tomato sauce
1 c. water
1- 15 oz. can pinto beans, drained
1- can of corn
3 T. taco seasoning or one envelope
1 c. shredded cheddar cheese
1- bag of fritos corn chips
chopped tomatoes (optional)

In large saucepan cook hamburger and onions until no longer pink. Drain fat. Add canned tomatoes, tomato sauce, water, beans, corn and taco seasoning. Heat through. In each bowl: add soup, cheese, chips and tomatoes. Yum!

Chicken Tortilla Soup #1

2 T. olive oil + 1 T.
2 onions, thinly sliced
4 cloves of garlic, minced
1/2 bunch of cilantro
1 can of black beans
2 cans stewed chopped tomatoes w/chilies
1 t. cumin
8 c. chicken broth
3 c. cooked, shredded chicken breasts
2 avocados chopped
1 c. Monterey Jack cheese, shredded
1 bag of tortillas chips or strips
fresh lime wedges
salt and pepper

In large saucepan, over med heat, saute' onion, garlic and 2 t. cilantro in olive 2 T. oil for 10 min. In blender combine sauteed mixture with tomatoes and blend. In same pan heat 1 T. olive oil, add newly blended tomato mixture with cumin. Cook and stir fro 5 min. until thickened a bit. Add chicken broth. Cover partially and simmer until thickened about 20 min. Add cooked chicken, cook for 3 min. Stir in black beans, salt and pepper to taste. Upon serving, place tortilla chips in bottom of bowl, fill bowl with soup, top with cheese, avocado, fresh cilantro and a squeeze of lime wedge. So very yummy!
