Banana Breakfast on the Go
In med. bowl combine the following:
2 cups fresh or frozen blueberries
2 bananas, sliced
1/2 c. old-fashioned regular oats
1/3 c. pomegranate juice
1-2 T. chopped walnuts
1 T. raw sunflower seeds
2 T. raisins

Combine all, heat in microwave for 3 min.  Let it set for 1 min. Ready to eat!


Strawberry Banana Smoothie   

1 cup frozen strawberries

1/2 c. frozen blueberries (optional)
2 cups orange juice
1 banana, broken in pieces
1/2 c. milk                                                  
2 T. sugar

Add ingredients together in blender and blend until smooth.
Pour into cups and drink for breakfast or for a treat.

Orange Banana Berry Smoothie

2 peeled oranges, add a little of the peel
1 banana
1-10 oz. bag of frozen strawberries
1 T. flax seeds

Mix all in Vita-Mix until smooth and enjoy!


Hot Oatmeal Smoothie

1/2 c. unsweetened soy milk
2 T. steel cut oatmeal or regular oats ( I used regular oats)
1 c. grapes, or whatever fresh fruit you have on hand, (peach, banana, blueberries, oranges) I used blueberries. Remember to use fresh fruit only
1/2 c. walnuts
1 T. raisins
1/4 t. cinnamon

Combine all ingredients in your Vita-mix blender. (if you don't have a Vita-Mix -I suggest you get one). Gradually increase speed to high and run for 2-4 min. just until the mixture is warm, you will see steam coming from the top. Pour in mug and enjoy . You may like best using a spoon. You can also use 1/4 c. water instead of soymilk.

Apple Pie Smoothie   

2 medium apples
3 dates, raw and natural/pitted
1/4 c. walnuts
1/4 c. raisns
1 t. cinnamon
1/4 t. vanilla
1 T. flax seeds
1 1/2 c. soy milk w/vanilla flavoring
Blend all in Vita-Mix until smooth and creamy.

Fruity Kale Smoothie
1 bunch of Kale
2 oranges, peeled
6 strawberries ( I used frozen but can use fresh)
1 c. grapes

Blend all in Vita-Mix and enjoy. This is so good, You have to try it.





Pancakes  

In large bowl, combine and mix:
1 1/4 c. flour
1 T. sugar
1 T. powder
1/2 t. salt

In med. bowl combine:
1 egg
1 c. milk
2 T. oil
!/2 t. vanilla

Mix and add to dry ingredients, stir until smooth. Add 1/4 c. of batter to hot lightly buttered griddle or frying pan. When batter forms small bubbles or holes, flip to cook other side. About 2 minutes on each side. Use your favorite syrup or fruit. I always triple this for the eight of us who eat it. Ready to eat.

French Toast 

1 egg
1/4 c. milk
1 t. sugar
dash of salt
dash of cinnamon
1 t. butter, melted
4 slices of bread

In a med. flat bottomed bowl combine all but the last ingredient. Beat for 30 sec. Butter a griddle to 325 or frying pan and wait for it to get hot on med. high heat. When griddle is ready. Dip bread in egg mixture, flip to soak the other side and quickly place on griddle or in frying pan. Cook 2 minutes on each side. Serve with your favorite syrup. This feeds one maybe two people, if you only want two each. For my family, I have to add five more times the amount.

Coconut Syrup

1 can of cream of coconut (found in your speciality aisle at the store) and 2 c. sugar.
Combine the two and bring to a boil on the stove. Very easy but makes for a different syrup. Don't get stuck with the same old syrup. Try something new.

German Pancakes

Preheat oven to 450.  When oven reaches 425 place a 9 x 13 baking dish in the oven with a 1/4 c. of butter or half a cube.

In blender mix well:
6 eggs
1 c. flour
1 c. milk
dash of salt

Blend until smooth. Open oven to pour into melted butter dish. Close and bake for 15 minutes. Serve with favorite syrup or honey butter.

Honey Butter
Cube of butter, softened and 1/2 c. honey.  Stir together until well blended. Spread on German Pancakes or Scones.

Cinnamon Crumble Cake

1/2 c. oil
2 eggs (beaten)
1 c. milk
3 c. flour
1 1/2 c. sugar
4 t. baking powder
1 t. salt

Preheat oven to 375. In med. large bowl combine, oil, egg and milk.  In small bowl add dry ingredients and mix. Add dry ingredients to milk mixture don't over stir only til moistened but mix well. Pour into greased
9 x 13 baking dish. Sprinkle with topping.

Topping:  In the same small bowl combine 1/2 c. brown sugar, 2 T. flour, 2 t. cinnamon, 2 T. melted butter and 1 c. chopped nuts (optional). Mix until all is moistened and pour over top of batter. Bake for 25 minutes.
