Dinner Choices w/ Beef or Hamburger


Tender Swiss Steak

1/4 c. flour
1/2 t. salt
1/4 t. pepper
2 lbs. beef stew meat
1/4 c. olive oil
1 onion sliced thin
2 c. water
2 T. Worcestershire sauce

Gravy: 1/4c. flour, 1/4 t. salt, 1/8 t. pepper & 1 1/4 c. beef broth.


Preheat oven to 325. Combine flour, salt & pepper. Coat beef stew meat and brown in oil only until browned. Place into 9 x 13 baking dish cover with thinly sliced onions. Combine water and Worcestershire sauce. Pour over the top and cover with tin foil, cook for 2 1/2 hours. When done baking. Combine flour, salt & pepper. Add beef broth until becomes smooth, add drippings from the meat and bring to a boil. Boil for 2 min. Ready to serve. Best served with mashed potatoes and peas n' carrots.  (I like it all in a pile, it's best that way) 


Souper Burgers

1 lb hamburger
1/2 c. chopped onion
can cream of celery soup
2 T. ketchup & mustard
dash of pepper
grilled buns
butter, softened

On the stovetop in a skillet cook hamburger and onions until browned and onions clear. Drain. Add soup, ketchup, mustard and pepper. Heat through on med. heat.  Take bun and spread soft butter on the insides and grill them until golden brown. Serve soup mixture in buns. So very easy and quick.

I usually serve with tater tots or fries or you could serve with mashed potatoes and peas n' carrots.



Sweet & Savory Beef Roast

1 beef rump roast
1 c. ketchup
1/4 c. grape jelly
1 envelope onion soup mix
pepper to taste

In large measuring cup or small bowl add ketchup, grape jelly, onion soup mix and pepper.  Cut in half the roast, put one half fat down in a crockpot. Pour half of the ketchup mixture on roast put other half of roast on top and add remaining sauce on top, spreading onto the sides too. Cook for about 8 hours.

This meal goes so well with potatoes and carrots boiled in a pot together, drained and put nicely around the roast that you have put in a serving dish with sides. Don't forget to use the roast gravy to smother over the potatoes and carrots. My mouth is watering right now thinking of it. It's so good. One of my kids favorite meals. Serve also with a salad and rolls.



Beef  n' Noodles 

1 can (10-3/4 oz) cream of mushroom soup 
2 T. onion soup mix
2 T beef broth
1 T. quick -cooking tapioca
1 lb beef stew meat, cut into 1-inch cubes
4 cups of cooked wide egg noodles or mashed potatoes

In a crockpot, combine the soup, soup mix, broth and tapioca; don't turn on yet. Let stand for 15 minutes. Stir in the beef. Cover and cook on low for 8 hours or until meat is tender. Serve over noodles or mashed potatoes. I have done both and liked them both. I like to serve peas n' carrots and rolls to go along with and make it complete.



Stroganoff

1 lb hamburger
1/2 onion, chopped
1 can (10 3/4 oz) cream of mushroom
1/2 c. water
1/2 c. sour cream
1/2 t. paprika
1/2 salt
dash of pepper
2 cups of noodles of choice. I use wide egg noodles

Cook noodles as directed on the package in med. large saucepan. In skillet, brown hamburger and onion. Add remaining ingredients including cooked noodles. Stir and heat through. 

I like to serve carrots or peas n' carrots with rolls. 



Almost Shepherds Pie

1 lb hamburger
can (10 3/4 oz) cream of mushroom
1/4 c. onion, chopped
1 egg
2 T. fresh parsley or 1/2 t. dried parsley
1/4 c. dried bread or toast
1/4 t. salt 
dash of pepper
2 c. mashed potatoes (real or instant)
1/2 c. cooked, crumbled bacon
1/2 c. cheddar cheese

Preheat oven to 350. Combine first eight ingredients in a med. large mixing bowl. Mix well and press into a 9 inch pie plate. Bake for 25 minutes. Meanwhile make your mashed potatoes and cook bacon and have it crumbled. Grate your cheese. Bring meat pie out of oven, spoon off grease. Top with mashed potatoes, bacon and then the cheese. Bake for another 15 minutes. Let stand for 5 or 8 minutes. Serve with green beans or corn, a salad and rolls. This dinner is one of those comfort foods. So good. Can't get enough.


Sweet n' Sour Meatballs


1 egg (beaten)
5 oz evaporated milk
1 c. quick oats
1/2 chopped onion
1 t. salt
1 t. chili powder
1/4 t. garlic powder
1/4 t. pepper
1 lb hamburger

Preheat oven to 350. In med. bowl mix first eight ingredients, mix and break apart and add the hamburger meat. Stir and mash into combined. Take a couple of fingers of meat mixture and roll into a 1 inch ball. Place into 9 x 13 baking dish. Complete all. Bake for 20 min.  Meanwhile make sauce.

Sauce: 1 c. ketchup, 3/4 c. brown sugar, 1/4 c. onion (chopped fine), and 1/4 t. garlic powder. Mix and bring to a boil. Reduce heat and simmer until meatballs are done. Pour over cooked meatballs and bake for 10 minutes longer.  Ready to serve with mashed potatoes and a veggies of choice usually corn and rolls.



Meatball Casserole 

2 lbs. meatballs thawed or can make own (look to recipe above don't use the sauce)
1 c. water
5 carrots
8 potatoes
2 cans of cream of chicken soup
salt and pepper to taste

Chop potatoes and carrots and cook in saucepan on stove for about 25 minutes or until veggies are tender. Drain. In another saucepan heat through the soups and water. Preheat oven to 375.  In 9 x 13 baking dish, pour in cooked veggies and thawed meatballs. sprinkle in salt and pepper and stir around a bit. Pour soup mixture on top and bake for 30 minutes.  This was my niece Nicholette's recipe. she cooked it for us while staying with us and we liked it. 


Hinckley Enchiladas

1 lb hamburger
1 med. can of enchilada sauce
1 can cream of mushroom soup
1 can  sm. tomato soup
2 t. vinegar
2 c. cheddar cheese, grated
12 corn tortillas

Soften tortillas by frying them in light vegetable oil 2-3 sec. each side. Place them on a plate, use paper towel to dry up any grease. Lay aside.  Brown hamburger in small skillet. In med. large saucepan heat through enchilada sauce, soups and vinegar. Grate your cheese. When all is ready, get a 9 x 13 baking dish. Pour almost half of sauce on bottom. Fill each tortilla with hamburger and cheese, place in baking pan. When complete, pour remaining sauce on top and sprinkle on cheese. Bake for 30 minutes or until bubbly hot.  

I love this recipe and love to eat it. Another comfort food for me. I serve the enchilada on rice with black beans, corn and a salad. So good. So worth it. I call them Hinckley Enchiladas because a lady in my previous ward had put this recipe in our ward recipe book and I have loved them since the first time I tried them and named them after her.
